We’re a local food truck here in Jacksonville, North Carolina, serving fresh seafood, crispy comfort food, and a little Vietnamese flavor in the mix.
For us, it’s pretty simple: we love good food, and we love serving people. We want every customer who stops by our truck to get a meal that is hot, fresh, full of flavor, and made with care.
Our menu brings together the seafood dishes people already know and enjoy – like fried shrimp, fried catfish, wings, and seasonal crawfish – with a few Vietnamese favorites like bánh mì, fried rice, egg rolls, and homemade sauces.
It’s not fancy. It’s just good food, cooked fresh, served hot, and made with heart.

Our Story
Eric’s Seafood & Vietnamese Cuisine started with family, friendship, and a love for cooking.
Eric comes from a background in technology, but cooking has always been close to his heart. A big part of that came from his family. His uncle has owned a Seafood & Chinese restaurant in New Iberia, Louisiana since 1991, and being around that restaurant taught Eric a lot.
He learned how much fresh ingredients matter. He learned the value of good flavor, crispy seafood, homemade sauces, and treating customers with respect. More than anything, he learned that food is one of the best ways to bring people together.
Jay also knows the restaurant business well. Many people in Jacksonville may remember him as the former owner of Pho Le, a local restaurant that served the community for years. After taking some time away from the restaurant business, Jay found his way back to something he has always loved – serving people through food.
Eric and Jay have been friends for years. Over time, they realized they shared the same heart for food, family, and community. So they decided to team up and build something of their own.
That’s how Eric’s Seafood & Vietnamese Cuisine was born.
The idea is simple:
